MISSION AYNI SPECIALTY COFFEES offers products and services, noted for their maximum quality and innovation, environmental responsibility, and social sustainability for the communities of the territory. VISION We will be a recognized nationally and internationally company, for transforming and contributing to the specialty coffee production chain, based on the Andean AYNI reciprocity system. WHAT WE DO AYNI COFFEES is a company focused on high-quality green and roasted coffee. We carefully look for qualified farms who focus on working in balance with the land and with everyone, thus selecting the best batches made by the hands of our Colombian farmers. Ayni is based on: • Select high-quality batches with unique characteristics. • Development of direct relationships among the producer and small producer cooperatives. • Educate the producer through the principles of Ayni (Reciprocity). • Provide traceability to roasters, being the producer the most important in this production chain. • Promote education, social and environmental awareness to improve the living conditions of families and communities. • Contribute to the research and practice of new high-quality coffee production processes while maintaining or improving the quality of the product. AYNI coffee is produced in Buesaco, a municipality located in the Nariño Department. It has special characteristics since this region is mountainous, it has extensive geography that produces one of the most highly demanded coffees in the world. This wide range of attributes carries out with a delicate, sweet, acid coffee grain. BUESACO SINGLE-ORIGIN FRAGRANCE: Flowery, blackberry, panela, apricot, woody FLAVOR: Red apple, panela, hazelnut, orange, blackberry RESIDUAL FLAVOR: caramel, long-lasting red apple ACIDITY: Citrus BODY: Silky PROCESS -WASHED PERGAMINE -HONEY -NATURAL QUALITY CONTROL It is carried out from the agronomic, from the processes and physical analysis in dry parchment and almonds. Then it is done the sensory analysis to determine the attributes and defects of the coffee. In that way, there is given a percentage or range of quality to select the coffee according to the profiles, to give the farmer or producer a reward for the good work OUR FAMILY OF PRODUCERS In recent years, the quality of Nariño coffee has been consolidated thanks to the participation of the department's coffee growers in several special coffee contests, which are well-known not only in Colombia but worldwide. In several of these contests, they ranked first place. For instance, in the Illycaffe contest, the first and third place was given in 2003, and 3 groups became finalists in 2004. In the Cup of Excellence competition, the first and second place was ranked in 2005. Also in 2006, they were ranked second place and 8 finalists participated in the coffee auction in that contest.
