It is almost summer time!! Here in Spain, hot weather is about to begin! Last saturday, in the market, I found the main ingredients to make one of my favourite recipes, which I would like to share whith you: GAZPACHO!I've found that gazpacho has a curious effect in people: You will love it or you will hate it, but nobody is indifferent about it. People who are gazpacho lovers use to adapt the basic recipe with all kind of personal and imaginative variations.

For me, the basic recipe is quite simple. (It is important to choose high-quality vegetables, due to the fact that you are not going to cook them, you will take them raw. Be sure to wash them properly). Pick up four tomatoes, as red and mature as possible. Take a pair of cucumbers, half a red sweet peper, half a green sweet pepper, a garlic clove (for me a pair of cloves are OK, but maybe is too much strong for most people). Some people add onion too, but I don't use to do it. A mite of salt, a touch of wine vinegar, and half a glass of olive oil ( Spanish if possible, of course, just to be sure that it is good ).

Just put half a litre of cold spring water in a jar, add all the ingredients (you only have to peel the cucumber and the garlic cloves, of course), salt, vinegar and oil. Mix it with a wisk, and let it stand in the fridge. As you probably know, gazpacho is a cold soup; the coldest, the best! If you find it very liquid, you can add some stale bread to obtain a more dense soup and mix it with the wisk. That will do the trick. For my uncommon personal recipe, I use to add a touch of comin grains. Enjoy this tasteful soup full of vitamins! Thank you very much!
