Every weekends, my husband goes to sake shop all the way from our place in Kawaguchi to Tokyo about 20minutes by car.  I like drinking, but I prefered wine to Japanese sake.  I can't buy wine frequently for myself so I'm getting to know sake recently.  It's good.

I like chilled one.  Not so strong, clear, aromatic one.  My favorte is Isojiman.  

When I was young, I didn't like beer,I prefered cooktails or sweet drinks.  Sake, drinks specially for middle aged I recognized.  Wine, for the sophisticated people, sake,for the  poor workers, was my image.  But recently sake makers are take turens to be young, graduated universities who had studied fermentation. And foreigners, women are in charged making sake.

Sometimes I hear about Sake accepted by foreigners receently.  My husband says Japanese sake needs specially cared to be tasted in good condition.  That is why  he has his own favorite shop to get it.

As wine is, sake has so much varieties of tastes.  Sweet, strong, clear, fruity, old, young, light, smells like pickles, and many other natural things.  But we never buy it in the supermarcket.  The price is not so cheep, but we never get good one.  Bad sake tastes awful.

 I'm rather happy to hear the news about sake in Paris, New York, London but I wonder how many people can enjoy real taste of Japanese sake.  I hope many people in different culture get to know the depth of sake world.  Like young people grow their sense of tounge for taste gradually from sweet to bitter, we need much experience to enjoy sake.  I think they need more and more years  to mature their sense of tasting sake.
